A thick winter-vegetable soup is the traditional Christmas Eve souper maigre—fasting supper—in Upper Provence. When choosing the pasta, look for the Provençale lasagnes—they look like very broad tagliatelli, but have prettily frilled edges to remind participants of the curls of the infant Jesus. The enrichment—oil or aioli—is handed separately to allow participants to adhere as strictly to the rules of fasting as they please.
