The paella is one of those amiable one-pot dishes that take their name from the pan in which they are cooked. If you have a proper paella pan—each comes in a size appropriate to the number to be fed—and the necessary wide-based heat source—a brush-fire that has been allowed to die down to charcoal or a barbecue pit—so much the better. If not, a flat-bottomed wok or a large skillet will do, although, strictly speaking, the true paella must be prepared over an open fire,
