Quick and easy, a milk custard made without eggs and a minimum of fuss, also served at weddings and for Eid-e-Ramazan, the feast that marks the end of Ramadan. Children love it

Ingredients

  • 4 cups/1 liter whole milk
  • Generous 1 cup/275

Method

  1. Heat the milk gently in a heavy pan with the sugar.
  2. Meanwhile, mix the cornstarch with a little water, enough to make a thin paste.
  3. When the milk is hot, but before it boils, whisk in the cornstarch. Add the cardamom and whisk over the heat till the mixture thickens. Pour Into a shallow dish, leave to cool, and sprinkle with the chopped nuts.
