This is the basic German sausage, all-meat, made without bread or rusk, and designed to be eaten fresh. At carnival time, in Freiburg, southwest Germany, as well as during the Saturday market, grilled bratwurst is the most popular street snack. If you can’t lay your hands on sausage casings, form the mixture into hamburger-size patties. It’s easiest if you dip your hands in warm water as you work.
