This really is pure fusion cuisine. Matoke, also known as green plantain, was adopted by Gujaratis (like my grandmother) who lived in Uganda, making it into a deliciously tangy and juicy curry. We still make it at home now, the perfect accompaniment to the traditional Thepla. It is very quick to cook, and it’s hearty and filling, so can also be eaten alone, maybe with a spoonful of yoghurt.
