Boil 2 large and cubed potatoes until soft and mash them. Add 1 finely chopped onion and 3 minced cloves garlic that have been sautéed in 2 tablespoons olive oil until tender. Season with 1 teaspoon salt, ½ teaspoon freshly ground black pepper, ¼ cup chopped fresh flat-leaf parsley, and 2 tablespoons chopped fresh coriander (cilantro). Stir in 1 beaten egg. Capers are an optional addition.
