These cookies go by many names, most of them affectionate. Algerian cook Emma Bensaid calls them knedettes. Knadels, or kneglets, appear in Fortunée Hazan-Arama’s Saveurs de mon enfance, as well as in L a table juive and Maguy Kakon’s L a cuisine juive du Maroc de mere et fille.
