Ingredients: 6-8 Ox Heart, heritage or vine-ripened tomatoes; sea salt; freshly ground black pepper; best quality extra virgin olive oil, for drizzling; ¼ cup small salted capers, soaked in warm water, drained and dried; 30 small black olives [such as Ligurian]; aged balsamic vinegar, for drizzling; 2 x 210 g jars Ortiz tuna fillets or 2 x 300 g jars Crespi tuna, drained; 1 large Lebanese cucumber, peeled; 1 large red pepper; 20 basi leaves, gently torn into small pieces

Bottled and tinned tuna fillets are often considered inferior to the fresh product; however, brands such as Spanish Ortiz and Italian Crespi tinned tuna are really superior to supermarket versions. They are better in this type of salad than their fresh counterpart as the preserved tuna is very moist and will absorb the flavour of the other ingredients more readily. This quickly prepared salad needs nothing more than good bread to make a very pleasant entrée in summer.
