Mixed Tomato Salad with Olives & Cucumber

This simple salad calls for several tomato varieties with contrasting flavours, textures and colours; fortunately, there are plenty to choose from these days. I have mentioned the Love Bite tomatoes in other recipes; they have a particularly firm texture and a great flavour. The little yellow grape tomatoes add a sweet touch, while teardrops offer lots of flavour with slight acidity. Ox Hearts are also full of flavour but be sure they are quite firm since they tend to go mushy once salted i
