Getting away from my restaurants was essential so that I could write this book in peace and quiet. I ventured to the Central Coast of New South Wales to stay at the Bells at Killcare resort, where my colleague and old friend Steve Manfredi has established a fine kitchen serving his delicious Italian food. Steve is growing a wide variety of tomatoes, one of which, the Costoluto Fiorentino, comes into its own when gently roasted. The salad was so good I ordered it three times
