Chicken Salad with Asparagus, Peaches & Pistachio Nut Vinaigrette

This is a main course for a special summer lunch. It may be assembled some time ahead of serving; however, the chicken should be dressed while still warm so that it absorbs the flavours of the pistachio nut vinaigrette. It is interesting to see how dishes evolve over time and this is a case in point. When I wrote this recipe for a cooking class in 2001, it relied on tomatoes and celery for the salad ingredients. The asparagus appeared a few years later, and now the sweetness of peaches seem
