This room-temperature pasta salad came about when the cupboard was almost bare apart from these ingredients. Orecchiette literally means ‘little ears’ in Italian and they are hand-shaped accordingly. Their ovate form allows them to capture a wet sauce, as long as some finely grated parmesan is added to assist this process when the dish is tossed.
