This simple melange of ingredients matches nicely with fish such as grilled ocean trout fillets or barramundi cutlets. Place the salad in two stacked baby cos leaves to provide a textural element. Alternatively, use the salad to moisten steamed and carefully skinned baby John Dory. Scrape away the little bones around the sides of each John Dory, then serve this dish at room temperature. Ideal as a main course on a hot day.
