Wild rice is not really rice, rather a cereal that looks something like brown rice. It has a nutty, sightly smoky flavour and is considered something of a delicacy. Wild rice is cultivated in the Mississippi Valley of the USA, Africa, South-East Asia and China, as well as Italy. The cooking method is much the same as that used for long-grain rice but when cooked it lacks the starchy quality of rice.
