Unmilled rice is a highly nutritious food due to the retention of the outer layers or husks, which provide an excellent source of dietary fibre. Naturally it requires longer cooking and should retain a slightly crunchy texture. As opposed to the relative blandness of white [or polished] rice, brown rice has a robust nutty flavour and can be made into delicious salads using a wide range of other ingredients such as raw vegetables, cooked meat, poultry and fish.
