The bitterness of the dandelion leaves is offset by the soft, oily garlic cloves and chopped hard-boiled egg. The crisp, smoky tang of the speck adds saltiness, while the vinegar-spiked bread provides much-needed acidity. You will need to work quickly at the last minute to keep the ingredients hot since the dressing includes the rendered fat from the speck. Don’t be concerned if the garlic breaks up when it is peeled; this is intentional. Serve this rustic salad all year round as an entrée
