Mogens Bay Esbensen was my business partner at Pavilion on the Park in the late 1970s, and later at Butlers restaurant. Mogens had a restaurant in Bangkok for seventeen years that was the first European restaurant in Thailand. Naturally, he gained enormous experience handling tropical fruit and subsequently published a wonderful book on the subject called A Taste of the Tropics, where his recipe for this dish first appeared in print. This is my version of the original recipe. Mogens
