Ingredients: 1½ cups (3 sticks, or 360 g) unsalted butter, softened to room temperature; 1 cup (100 g) confectioners’ sugar; 1 teaspoon pure vanilla extract; 1 teaspoon coconut extract; 2¾ cups (330 g) all-purpose flour, plus more for work surface and rolling out; ¼ teaspoon salt; 2 tablespoons (10 g) lime zest; ½ cup (45 g) shredded sweetened coconut; 1 to 2 teaspoons water; 2 (4 ounces, or 113 g, each) bars white chocolate, coarsely chopped

Reminiscent of a day at the beach, these super buttery and white chocolate–dipped cookies taste like paradise. The recipe is based on that for my Buttery Shortbread, an excellent starting point for an array of different flavors.

Method

Preheat oven to 350°F (180°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
In a large bowl, using a handheld mixer or a stand mixer fitted with a paddle attachment, beat the butter on medium-high speed until smooth, abou
