Midnight Brownie Cookies

Brownie cookies have been on my baking bucket list (you have one of those, too, right?) for about five years. I tested a few versions for this cookbook, and the recipe below came in first place with my friends and family. The cookies taste like fudge brownies, but they have these incredibly addictive crisp and chewy edges. I suggest using Dutch-process cocoa because it’s slightly less acidic and will produce deeper, darker brownie cookies.
