Lettuce Salad Bites with Avgolemono Dressing

This a great way to use up that less-than-pert lettuce lurking in the hydrator of your fridge. Round (butterhead) lettuce works best with this as it is already soft, but any lettuce can be rendered pliable by the process of blanching. Salad bites are perfect for finger buffets, as the whole salad thing is wrapped up in the lettuce leaf. No mess. No washing up. Rather clever really.
