Couscous, according to my significant other, tastes like ground cardboard... unless it is heavily disguised. This salad he can handle – it has a ton of stuff up it to disguise the basic granular blandness of the grain.

It is based on a sandwich – the muffaletta sandwich, which is a bit of a New Orleans institution, quite apart from being one of the best-named dishes ever. Created by Sicilian settlers, it is a kind of Deep South Dagwood, with layers of all sorts to titillate the tast
