Ingredients: ¼ cucumber, peeled and sliced into half-moon shapes; 150 g/5½ oz Roquefort cheese, crumbled; 1 tbsp balsamic vinegar; 2–3 tbsp extra-virgin olive oil; ⅓ tsp ground black pepper; salt; ½ tsp chilli (red pepper) flakes; 3–4 allspice berries, lightly crushed; 2 cm/¾ in.knob fresh ginger, peeled and diced; 1 red onion, sliced; 80 g/3 oz mixed salad leaves; 50 g/1¾ oz/⅓ cup shelled pecan pieces (or walnuts); 300 ml/10 fl oz/1¼ cups dry cider; 150 ml/5 fl oz/⅔ cup water; 150 g/5½ oz/¾ cup sugar
