The huge influence of Italian cookery has often concentrated on the starch element: pasta, rice, polenta or pizza base. These dumplings are overlooked. The name is unfortunate, malfatti sounds like something badly made, but they are both light and delicious.
Sweat the onion in the butter and cook until soft but not browned. Add the spinach and cook for another few minutes until it wilts. Season with salt and pepper, then drain in a colander until cool.
