Dill, the herb, is astringent but not as aniseed as lookalike fennel. It partners the sweetness of shrimps or crayfish well. A subtle but meaty fish will suit this dish perfectly. So cod or hake would also be fine but not herring, mackerel or red mullet.

Skate is underrated, with firm white flesh and good flavour. The wings do not have any bones as such; the meat sandwiches a layer of bone-like cartilage. Usually this is left in place and, when cooked, the meat is slid down and off
