Complex

This dish looks complex but is straightforward and not reliant on any reduced stocks or preparations of the commercial kitchen. Most dishes of a Middle Eastern nature seem to assume a healthily stocked store cupboard, but the only piece of kit that is necessary will be a liquidiser for the dressing.
Chop the marinade ingredients together and crush them to a pulp with the flat of a knife or a mortar and pestle. Work in the olive oil, then massage the result over the quails. Leave for 2 hours or overnight.
