Lemon chicken with green olives

Lemon and chicken go well together. In the Maghreb region of North Africa chicken braised with salted (preserved) lemon is a standard dish, and lots of people, myself included, will put a whole lemon in the central cavity of a bird to be roasted. You can chargrill the chicken rather than roast it as here if you prefer the barbecue scorch marks and a faster result.

Another good way of producing lemon flavour is to pare off the rind and cut it into fine strips. Macerate these in the l
