Sweetbreads are one of those words that provoke macho approval. In fact, sweetbread is a portmanteau word covering all white offal, usually from calves or lambs. Not just testicles. The two glands most used are in fact the thymus, sometimes called throat breads, and the pancreas, which is generally sold as heart breads because of their fist shape.
