Perfect with a pot of tea or cup of coffee, not just a glass of sweet wine. The standard test for doneness is a skewer or sharp knife inserted into the centre of the cake. If the skewer comes out clean, the cake it is ready. Madeira cake keeps well, in fact it tastes better the day after baking.

Ingredients

  • 170 g unsalted butter - at room temperature, plus extra for greasing
  • 170 g caster sugar

Method

Preheat the oven to 170°C/fan 150°C/gas mark 3. Grease a 225g loaf tin with butter.

Cream the butter, sugar and zests together - a food processor or electric beater will be fine - then beat in the eggs, one at a time. Next, add the lemon juice, flour, baking powder and salt.
