Quiches have a serious image problem, largely the result of crap winebars offering dishes containing little egg, no cream and rubbish pastry alongside nasty ham and cheese, battery chicken in some herbal disguise and mysterious ‘Mediterranean’ vegetables. Real quiche is a real treat. At Carrier’s we used to offer a miniature one as a second course with maybe spinach and ricotta or shrimps, bacon and parsley as filling.
