The OG po’boy was filled with roast beef bits and gravy, and it was all about high-calorie intake and cheap cost of goods. Today, other iconic fillings have come into play, most of which are of the fried seafood variety. In New Orleans, fully dressed means shredded lettuce, tomatoes, mayonnaise, and pickles.
