Perloo, also spelled purloo and purlow (and pronounced puhr-loe), is a one-pot rice-based dish with complex origins and etymology that can be traced back to Persia. Its preparation methods share similarities with many other treasured dishes found in regions where rice farming has historically provided a way of life. However, it was enslaved Africans who introduced it to the South in the form that we know and celebrate today.
