Catfish have a slightly sweet, mild flavor and dense, moist flesh. This bottom-feeding species is notorious for having a muddy flavor. It is not because the fish are actually eating mud, which causes folks to conclude that catfish are a dirty species, but rather an organic result of algae and microorganisms found in freshwater.
