The Florida pompano is a member of the jack family, and although it is most commonly harvested along the coast of Florida, its migratory patterns span from Massachusetts to Brazil. Pompano meat is firm and somewhat sweet, with a finely flaked texture, and we find that it’s an excellent choice for whole preparations. The most common catch size hovers right around two pounds, the high fat content allows for cooking it well done without drying out, and the meat peels right off the bone.
