(about 6 oz.) prepared white truffle butter, softened; Salt and pepper, to taste; Sugar, to taste; 1 qt. heavy cream; 3 pts. chicken stock or water; 3 pts. canned plum tomatoes, including juice; ¼ cup brandy; 5 cloves garlic, peeled and coarsely chopped; 1 medium Spanish onion, peeled and coarsely chopped; 4 Tbsp. butter; 3 Tbsp. butter; 6 oz. Italian fontina cheese, grated, (about ¾ cup)
