Method

Combine ingredients for broth and bring to a boil. Once at a rolling boil, add lobster. Cover for about 6-8 minutes. While cooking, prepare an ice bath to shock the lobster. Submerge the lobster in the ice bath, cool completely and begin removing the meat from the shell. Lightly crack the claws and reserve for the final presentation.
