Ingredients

  • Vegetable oil, as needed
  • 5 oz. blue fish, skin left on
  • 2 tsp. Cajun spices

Method

Heat up a cast iron skillet or frying pan until very hot. Drizzle with vegetable oil. Pat the fish with the Cajun spices on the skin side. Sear for 2 minutes. Turn over and cook for 1-2 minutes on the second side, or until fish is done. Assemble the sandwich with the remaining ingredients. Serve with spinach salad.
