Ingredients

Pork Belly Brine

  • 5 cups water
  • 2 cups kosher salt
  • 1 tsp.

Method

Add all ingredients, except the pork belly, to a pot and slowly bring to a boil. Remove from heat and cool completely. Lay the pork belly flat into a container and cover with the brine. Refrigerate for 24 hours. Rinse in cool water for 1 hour. Cry-o-vac and cook at 140° for 46 hours</
