Place sardine filets on oven proof baking dish and season with salt and pepper and drizzle with olive oil. Place under broiler and cook for 5 minutes.
Remove one filet onto serving dish and top with sliced lemon, tomato, capers, and pine nuts. Top off with the other filet and drizzle with olive oil, creating a sandwich.
