  • 8 thick slices of quality bacon
  • 8 medium soft shell crabs, dispatched and cleaned
  • ½ cup

Method

To make the pesto, place all of the pesto ingredients in the bowl of a food processor. Process till smooth. Refrigerate.

In a large sauté pan at medium heat, cook bacon till crisp. Remove and keep warm. Discard half the fat, return pan to medium heat.

Dredge crabs lightly in flour, then sauté shell side down for 2 minutes. Flip the crabs, add the butter, and cook 2-½ minutes lon
