Roasted Pepper Mayonnaise

  • 4 room-temperature egg yolks
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp.

Method

Place the egg yolks, mustard, red wine vinegar, salt and pepper in a stainless steel bowl. With a whisk, incorporate the oils in a thin stream. Add the chopped peppers and tarragon to the mayonnaise. Check seasoning, keep aside for use.
