Stuff flaky croissants with a spicy potato filling for a snack that hits all the spots when you need a dose of comfort. This idea came about because I had a batch of leftover samosa filling stashed in the fridge and a packet of croissants ominously going stale on my kitchen counter. It’s fast, easy and a go-to brunch in my home.

Ingredients

  • 4 all-butter croissants
  • ½ red onion, finely diced
  • 1 tomato, diced

Method

  1. First, make the filling. Wash the potatoes and use a fork to prick holes all over the skins. Microwave on high power for 10 minutes, or until cooked through. Alternatively, boil the potatoes in their skins until tender. Allow to cool for 15 minutes and then peel the skins off. Roughly mash the potatoes with the back of a fork.
