What do you do when a crowd of American boys arrives in Annecy on a surprise visit? Open the icebox, find bacon, fresh plums and cornmeal, and start cooking. As it turned out, we all loved it. Use Italian prune plums for the true taste. A lamb’s lettuce with walnut oil dressing rounded out the meal.

Ingredients

  • 3 large onions, finely chopped
  • ½ cup butter
  • 5 ounces

Method

Before cooking the polenta as indicated in the master recipe, sauté the onions in the butter and remove them to a plate; in the same pan, cook the bacon and discard its fat; return the onions and bacon to the pan, add water, and proceed to prepare the polenta. It will be nicely flavored and contain protein for hungry boys.
