When the summer jams run out toward February, I prepare this marmalade, which is always a pleasure for my Savoie friends, for whom it remains a bit exotic. The marmalade is very different depending on whether it is made with American or European citrus. Calamondin oranges are those cut little ones produced by the dwarf decorative orange trees; they make the most wonderful jam.
