Spelt has become very popular over the past decade but has been around forever. It’s a member of the wheat family but appeals to people who see it as a more easily digestible ‘grain’. However, it does contain gluten, so it’s not for coeliacs. You can substitute pearled barley in this recipe but it will take an additional 20 minutes to cook. Pearling means the outer bran layer has been removed so it will cook quicker than if it hasn’t been pearled. You can replace the radicchio with endive (
