Spelt has become very popular over the past decade but has been around forever. It’s a member of the wheat family but appeals to people who see it as a more easily digestible ‘grain’. However, it does contain gluten, so it’s not for coeliacs. You can substitute pearled barley in this recipe but it will take an additional 20 minutes to cook.
