Chia seeds are considered somewhat of a superfood and so here is a recipe that’s easy to make and fairly versatile that you can use frequently. This is fabulous tossed with salad leaves, cucumber and tomatoes, or on a warm potato salad. Use it to dress chilled soba noodles, tofu and cold roast chicken. Blend it using either a stick blender or a small jug blender. It will keep in the fridge for 5 days.
