This chunky dressing is good spooned over summer-ripened heritage tomatoes or wedges of iceberg lettuce and slivers of apple, or tossed with chilled cooked rice or pasta, sliced chicken and lots of herbs. The apple juice adds some sweetness, but you can replace it with a different type of fruit juice or a little honey and cold water if you prefer. It will keep in the fridge for 2 days.
