Sabzee is a wholesome, simple, and vigorous dish from Afghanistan that is eaten in the spring when new herbs have sprouted. Here it’s tucked inside whole wheat pita bread spread with a little cayenne-seasoned yogurt. The tastes are very distinct—the tart, cool yogurt, the firm presence of wheat in the bread, and the complexity of flavors in the herbs. The mixture comes completely alive in the mouth.
