This is my “fast food” and one that I have come to rely on when I’m really busy working. There is absolutely no claim to any authentic Mexican culinary history here. What I call a quesadilla is a hot tortilla “sandwich” of soft, melted cheese accompanied by any number of other things I might already have on hand. These quesadillas take a little over a minute to make, quick enough to satisfy the most urgent appetite.
