Like our hard, round-headed cabbages, nappa cabbage is a member of the Brassica genus. But unlike the sturdy Western varieties, this Asian cabbage has tender, crinkly leaves that make a fine, delicate salad. The solid base of the leaves is also crisp and tender and can be eaten right along with the leaves. Nappa cabbage is easy to find in Asian markets and almost any big supermarket. These cabbages are heftier than their pale appearance would suggest, and unlike most salad greens the
